Ingredients
Crust
- 11 full-sheet graham crackers (about 160g)
- 1/2 cup (62g) salted macadamia nuts, roasted
- 2 Tablespoons (25g) granulated sugar
- 5 Tablespoons (71g) unsalted butter, melted
Filling
- 28 ounces (two 14-ounce cans/793g) full-fat sweetened condensed milk
- 1 cup (240ml) key lime juice
- 4 large egg yolks
- 1 teaspoon key lime zest
Garnish (Optional)
- Lime zest
- Quartered lime slices
- Macadamia nuts
- Whipped cream or meringue topping
Instructions
- Preheat Oven: Set your oven to 350°F (177°C) to prepare for baking the pie.
- Make the Crust: In a food processor, pulse the graham crackers and macadamia nuts into coarse crumbs with some larger nut pieces remaining. Transfer to a medium bowl, stir in sugar, then add melted butter. Stir until combined to form a thick, coarse, sandy mixture. Press the mixture into an ungreased 9-inch pie dish using your hand with medium pressure, smoothing and shaping the crust to have a rounded edge.
- Pre-bake Crust: Bake the crust at 350°F for 8 minutes. Remove from oven and keep oven on for the filling step.
- Prepare the Filling: In a bowl, whisk together the sweetened condensed milk, key lime juice, and egg yolks until smooth. Stir in the lime zest.
- Fill the Crust: Pour the lime filling into the warm pre-baked crust, spreading evenly.
- Bake the Pie: Bake in the preheated oven for 18 to 20 minutes until the filling is mostly set but still slightly jiggly in the center.
- Cool and Chill: Remove from oven and allow the pie to cool completely on a wire rack. Then cover and refrigerate for at least 1 hour or up to 3 days to fully set and develop flavor.
- Garnish and Serve: Add desired garnishes such as lime zest, lime slices, macadamia nuts, whipped cream, or meringue just before serving.
- Storage: Store any leftovers covered in the refrigerator for up to 1 week.
Notes
- Use full-fat sweetened condensed milk for the best creamy texture.
- Be careful not to overbake the filling; it should remain slightly jiggly to ensure a smooth custard.
- Pat the crust gently but firmly to avoid it falling apart when sliced.
- Key lime zest adds bright flavor, but can be omitted if unavailable.
- Leftover pie flavors improve if chilled overnight.
