Ingredients
Zucchini Mixture
- 3 large zucchini, finely grated
- ½ teaspoon salt
Batter
- 1 large egg
- 5 tablespoons all-purpose flour
- 4 tablespoons Parmesan cheese
- ¼ teaspoon salt
- Ground black pepper to taste
- Oil for frying
Toppings
- 1 tablespoon grated Parmesan cheese, or to taste
- 1 pinch salt
- ¼ cup sour cream, for topping
Instructions
- Prepare the zucchini: Combine grated zucchini and ½ teaspoon salt in a bowl and stir well. Let it sit for 10 minutes to draw out excess moisture. Then transfer the mixture onto a clean dish towel or cheesecloth and squeeze thoroughly to drain all liquid.
- Make the batter: In a separate bowl, whisk the egg. Add the flour, 4 tablespoons Parmesan cheese, ¼ teaspoon salt, and ground black pepper. Mix until combined. Stir in the drained zucchini and blend thoroughly to form the batter.
- Cook the fritters: Heat oil in a medium-sized pan over medium-high heat. Drop spoonfuls of the batter into the hot oil, flattening slightly if desired. Fry until the fritters are golden brown on one side, about 2-3 minutes, then flip and cook the other side similarly. Each batch will take approximately 5 minutes total. Transfer cooked fritters to a serving plate lined with paper towels.
- Serve: Immediately sprinkle the hot fritters with grated Parmesan cheese and a pinch of salt. Serve warm with sour cream on the side for dipping.
