Description
These refreshing Watermelon Popsicles are a perfect healthy treat for hot days, combining juicy watermelon, sweet strawberries, fresh lime juice, and a touch of honey. With just four simple ingredients and no cooking required, they’re easy to make and delightful for all ages.
Ingredients
Fruits
- 4 cups diced seedless watermelon (rind removed)
- 1 cup fresh or frozen strawberries (stems removed and roughly chopped)
Flavorings
- 1 tablespoon fresh lime juice (or to taste)
- 2 tablespoons honey (or to taste)
Instructions
- Prepare popsicle molds: Ensure you have 6 standard popsicle molds ready to use, as this recipe yields 6 popsicles.
- Blend ingredients: In a blender, combine the diced watermelon, chopped strawberries, fresh lime juice, and honey. Blend until smooth and well incorporated, scraping down the sides as needed. Adjust lime juice or honey to your taste preference.
- Pour mixture into molds: Evenly pour the blended mixture into the popsicle molds, leaving about a ⅓ inch gap at the top to accommodate expansion during freezing. Assemble the molds with lids or sticks.
- Freeze: Freeze the popsicles for at least 4 to 6 hours, or preferably overnight, until fully set.
- Unmold popsicles: To release the popsicles, briefly run warm water over the outside of each mold for a few seconds to loosen, then gently pull out the popsicles.
Notes
- Use seedless watermelon to avoid seeds in the popsicles.
- If fresh strawberries are unavailable, frozen strawberries work well—just thaw slightly before blending.
- Adjust the sweetness and tartness by varying the amount of honey and lime juice to suit your taste.
- For easier pouring, use a measuring cup or small pitcher with a spout to fill the molds.
- To store, keep popsicles in the molds or transfer to a freezer-safe container or bag once fully frozen.
