Made with fresh watermelon, mint, lime juice, and a touch of sugar, this drink balances sweetness and citrus notes with herbal freshness. Ingredients
Mint Syrup
- ¼ cup fresh mint leaves
- ¼ cup granulated sugar
- 4 cups water

- 5 cups cubed watermelon, seeds removed
- ¼ cup fresh lime juice
- 2 cups water
- Fresh mint sprigs, for garnish
Instructions
- Make the Mint Syrup: In a small pot, bring 4 cups of water to a boil. Add the fresh mint leaves and granulated sugar, stirring until the sugar has fully dissolved. Remove the pot from heat, transfer the syrup to a heatproof container, and let it chill uncovered for about 30 minutes to infuse the mint flavor.
- Strain the Syrup: After chilling, strain the syrup through a fine mesh sieve into a bowl to remove the mint leaves. Discard the leaves.
- Blend the Agua Fresca: In a blender, combine the prepared mint syrup, cubed watermelon, and fresh lime juice. Blend on high speed until very smooth to create a vibrant pink mixture.
- Strain the Mixture: Pour the blended liquid through a fine mesh sieve into a pitcher to remove any pulp for a silky-smooth texture.
- Adjust Consistency and Serve: Stir in 2 cups of cold water to dilute the mixture to desired consistency. Serve the Agua Fresca over ice and garnish each glass with a fresh mint sprig for an appealing presentation.
