Description

These refreshing Watermelon Kiwi Popsicles combine juicy watermelon and tangy kiwi to create a delicious and healthy frozen treat, perfect for hot days. Sweetened lightly with honey, they are easy to make with just a blender and popsicle molds, and are naturally hydrating and packed with vitamins.


Ingredients

Primary Ingredients

  • 1/2 small seedless watermelon
  • 4-5 kiwi fruit
  • 1 tsp honey (or more to taste)


Instructions

  1. Prepare Watermelon Puree: Remove the flesh from the rind of the watermelon and cut into large chunks. Process in a food processor or blender until smooth, pulsing to break down any remaining chunks. You should have about 2 cups of puree.
  2. Freeze Watermelon Layer: Fill each of your 10 popsicle molds about 3/4 full with the watermelon puree. Place the molds in the freezer for 30 minutes to let this layer firm up slightly.
  3. Prepare Kiwi Puree: Peel the kiwis and cut into chunks. Puree them in a blender until smooth. Add honey to taste and blend again. You will need about 1 cup of kiwi puree.
  4. Assemble Popsicles: Fill each popsicle mold to the top with the kiwi puree. Insert a popsicle stick into each mold—the thick kiwi mixture will support the sticks upright. Freeze the molds until the popsicles are completely solid, which takes about 4 hours or more.
  5. Remove Popsicles: To unmold, fill the sink with hot tap water and immerse the popsicle molds up to (but not over) the top edge for about 5 seconds. If the popsicles do not release, immerse for a few seconds longer. Avoid leaving in hot water too long to prevent melting.

Notes

  • You can adjust the sweetness by adding more honey to the kiwi puree if desired.
  • If you do not have popsicle molds, small paper cups and wooden sticks can be used as an alternative.
  • Ensure the watermelon is seedless or remove seeds before blending for a smooth texture.
  • Freezing times may vary depending on your freezer’s temperature.
  • For an extra touch, you can add small pieces of fresh fruit inside the molds before freezing.
