Ingredients

Cupcake Batter

  • 1/2 cup melted coconut oil (or melted butter or canola oil)
  • 3/4 cup packed dark brown sugar
  • 1 tablespoon vanilla extract
  • 2 large eggs, at room temperature
  • 1 1/2 cups pumpkin puree
  • 1 1/2 cups all-purpose flour
  • 1 1/4 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 3/4 teaspoon kosher salt
  • Reserved half of chai spice blend (from above)

Cinnamon Brown Sugar Frosting

  • 8 tablespoons salted butter, at room temperature (divided: 2 tablespoons melted and 6 tablespoons for frosting)
  • 1/4 cup heavy cream
  • 1/2 cup packed dark brown sugar
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon cinnamon
  • 1 1/2 cups powdered sugar


Instructions

  1. Prepare chai spice blends: In a shallow bowl, combine cinnamon, ginger, cardamom, nutmeg, all-spice, cloves, and black pepper. Divide this mixture in half. Mix one half with granulated sugar and set aside for cupcake topping. Reserve the other half for the cupcake batter.
  2. Preheat oven and prepare pans: Preheat the oven to 350°F (175°C). Line 16 cupcake molds with paper liners to ensure cupcakes bake evenly and are easy to remove.
  3. Mix cupcake batter: In the bowl of a stand mixer or using a hand mixer, beat together melted coconut oil, dark brown sugar, vanilla extract, eggs, and pumpkin puree until combined.
