Ingredients

For the Crust

  • 22 Oreo Cookies (about 200g)
  • 5 tablespoons Unsalted Butter (70g, melted)

For the Ganache

  • 0.75 cup Heavy Cream (180ml)
  • 6 ounces Semi-sweet Chocolate (170g, chopped)

For the Filling

  • 1 cup Heavy Cream (240ml)
  • 8 ounces Full-fat Cream Cheese (225g, softened)
  • 1.5 cups Creamy Peanut Butter (400g)
  • 0.75 cup Confectioners’ Sugar (90g)
  • 1 teaspoon Vanilla Extract

Optional Toppings

  • Whipped Cream
  • 1/4 cup Reese’s Pieces (about 30g, crushed)
  • 1/4 cup Chopped Peanuts (about 30g)


Instructions

  1. Prepare the crust: Preheat the oven to 350°F (175°C). Crush the Oreo cookies into fine crumbs and combine them with the melted unsalted butter. Press this mixture firmly into the bottom and slightly up the sides of a pie dish. Bake for 10 minutes to set the crust, then allow it to cool completely.
  2. Make the chocolate ganache: Heat 0.75 cup of heavy cream until it just begins to boil. Pour the hot cream over the chopped semi-sweet chocolate and let it sit for a minute. Stir gently until the chocolate is fully melted and the mixture is smooth. Allow the ganache to cool to room temperature.
  3. Prepare the peanut butter filling: Whip the cold heavy cream until stiff peaks form. In a separate bowl, beat together the softened cream cheese, creamy peanut butter, confectioners’ sugar, and vanilla extract until smooth and creamy. Gently fold the whipped cream into the peanut butter mixture until fully incorporated and fluffy.
  4. Assemble the pie: Spread the peanut butter filling evenly over the cooled Oreo crust. Pour the room temperature chocolate ganache evenly over the peanut butter layer. Cover the pie and refrigerate for at least 6 hours or overnight to allow it to set completely.
