Ingredients
Sauce Ingredients
- 1 cup heavy whipping cream
- 1/2 cup chicken broth
- 2 cloves garlic, minced
- 1 ½ teaspoons Italian seasoning
- 2/3 cup freshly grated Parmesan cheese
- 1/2 Tablespoon all-purpose flour
- 1 Tablespoon water
- 1/4 teaspoon black pepper
Pizza Ingredients
- 6 Flatbreads or Pita Breads (such as Papa Pita brand)
- 2 cups cooked chicken, chopped (Costco Bare Life chicken nuggets used)
- 1 ½ cups sun-dried tomatoes
- 1 ½ cups baby spinach leaves, torn
- 2 cups shredded Mozzarella cheese
Instructions
- Preheat the oven or air fryer: Set your oven or air fryer to 350 degrees Fahrenheit to prepare for baking the pita pizzas.
- Prepare the creamy sauce: In a medium saucepan over medium heat, combine the heavy cream, chicken broth, minced garlic, Italian seasoning, freshly grated Parmesan cheese, and black pepper. Stir the mixture to blend all ingredients evenly.
- Thicken the sauce: In a small bowl, mix the all-purpose flour and water to create a slurry. Pour this slurry into the sauce while whisking continuously. Continue cooking and whisking until the sauce thickens to a creamy consistency. Once thickened, remove the saucepan from heat and cover it to keep the sauce warm.
- Assemble the pita pizzas: Lay the pita breads flat on a clean surface. Spoon approximately 3 tablespoons of the prepared sauce evenly over each pita. Then, spread about 1/3 cup of chopped cooked chicken, 1/4 cup sun-dried tomatoes, and 1/4 cup torn baby spinach leaves evenly across each pita. Finish by sprinkling 1/3 cup shredded mozzarella cheese over the toppings.
- Bake or air-fry the pizzas: For oven baking, place the assembled pita pizzas on greased baking sheets and bake for 10 to 12 minutes or until the cheese is melted and bubbly. For air-fryer cooking, place one pita pizza on the air fryer tray and cook for 5 to 6 minutes until the cheese melts.
- Serve: Remove the pita pizzas from the oven or air fryer and serve them warm, accompanied by any remaining sauce for dipping. Enjoy your delicious Tuscan Garlic Chicken Pita Pizzas!
Notes
- If using the oven, arrange multiple pizzas on baking sheets; if air-frying, cook pizzas individually for best results.
- The sauce can be made ahead and kept warm or reheated gently before assembling pizzas.
- Feel free to substitute cooked chicken with leftover rotisserie chicken or grilled chicken breast.
- Sun-dried tomatoes packed in oil can add additional flavor and moisture; drain slightly if using oil-packed.
- For a lower-fat version, substitute heavy cream with half-and-half and reduce cheese quantities.
