These Turkey Taco Bowls are a flavorful and healthy meal option, featuring lean ground turkey seasoned with a homemade taco spice blend, served over rice and topped with fresh veggies, beans, and all your favorite Mexican-inspired toppings. Perfect for a quick weeknight dinner or meal prep for the week.
Ingredients
Spices and Seasoning
- 1 TBSP chili powder
- 1 ½ tsp ground cumin
- 1 tsp dried oregano
- ¾ tsp sweet paprika
- ½-¾ tsp garlic powder
- ¼ tsp cayenne pepper (or extra to make it spicy)
- Salt, to taste
Turkey Mixture
- 1 pound 93% Lean Ground Turkey
- 1 small yellow onion, diced
- 1 TBSP tomato paste
- ¼-½ cup water
Other Components
- 2 cups cooked rice
- 2 cups chopped or shredded romaine lettuce
- 1 can black beans, drained and rinsed
- 1-2 cups corn (canned or cooked from fresh or frozen)
Toppings and Mix-ins
- ¼-½ cup sour cream
- Diced tomatoes or fresh salsa
- Guacamole or sliced avocado
- Thinly sliced red onion (raw, sautéed, or pickled)
- Tortilla chips or corn chips
- Fresh cilantro and/or chopped scallions
- Sliced jalapeño peppers
- Grated cheddar cheese
- Lime wedges
- Taco sauce or Mexican hot sauce
Instructions
- Make the Taco Seasoning: In a small bowl, combine chili powder, ground cumin, dried oregano, sweet paprika, garlic powder, cayenne pepper, and salt. Stir well to create your homemade taco seasoning. Alternatively, use a pre-made taco seasoning mix if desired.
- Sauté Onions: Heat a large skillet over medium-high heat and add a small amount of oil until shimmering. Add the diced onion and cook, stirring occasionally, until they become tender and translucent, about 5 minutes.
- Cook Turkey with Seasoning: Stir in the prepared taco seasoning and tomato paste into the onions, cooking and stirring constantly for about 30 seconds until fragrant. Add the ground turkey, breaking it up with a spatula, and cook until almost cooked through but still slightly pink, about 2-3 minutes. Then pour in ¼ to ½ cup water and reduce the heat to low. Simmer until the mixture becomes saucy, thickened, and fully cooked through. Taste and add extra salt if needed.
- Assemble the Bowls: Divide cooked rice, romaine lettuce, black beans, and corn evenly between four bowls. Spoon the seasoned turkey on top and add a dollop of sour cream. Add any or all of your favorite toppings such as diced tomatoes or salsa, guacamole, red onions, tortilla chips, fresh cilantro, jalapeño slices, grated cheddar cheese, lime wedges, and taco sauce.
- Enjoy or Meal Prep: For meal prep, layer rice, beans, corn, and taco meat in containers. Keep salsa and tomatoes separate if preferred warm or cold. Add toppings like taco sauce, cheese, lime, cilantro, scallions, onions, and jalapeños to garnish. Store sour cream, guacamole, and chips in separate small containers to keep fresh until serving. Refrigerate for up to 4 days.
