Ingredients
Puff Pastry Base
- 1 sheet puff pastry, thawed if frozen
Toppings
- ½ cup pesto
- ½ cup crumbled blue cheese
- 1 ½ cups cherry tomatoes, halved
- Kosher salt and pepper, to taste
Egg Wash
- 1 egg
- 1 teaspoon water
Garnish
- Fresh basil leaves, for topping
Instructions
- Preheat Oven and Prepare Pastry: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and place the thawed puff pastry sheet on top. Use a fork to prick the surface of the pastry all over to prevent excessive puffing during baking.
- Spread Pesto and Add Cheese: Evenly spread ½ cup of pesto across the puff pastry, leaving a 1-inch border around the edges free of pesto. Sprinkle half of the crumbled blue cheese over the pesto layer to build flavor.
- Add Tomatoes and Seasoning: Arrange the halved cherry tomatoes evenly over the pesto and blue cheese layer. Lightly season with kosher salt and freshly ground black pepper to enhance the taste. Then, sprinkle the remaining blue cheese on top of the tomatoes.
- Apply Egg Wash: In a small bowl, beat the egg with 1 teaspoon of water to create an egg wash. Brush this mixture along the exposed edges of the puff pastry to encourage a golden, glossy crust when baked.
- Bake the Tart: Place the baking sheet in the preheated oven and bake the tart for 15 to 20 minutes. Bake until the puff pastry is puffed up, golden brown, and flaky.
- Garnish and Serve: Once baked, remove the tart from the oven. Top it with fresh basil leaves and optionally add more crumbled blue cheese or parmesan for extra flavor. Slice into servings and enjoy warm or at room temperature.
Notes
- Ensure the puff pastry is fully thawed for even baking and proper puffing.
- You can substitute pesto with sun-dried tomato paste or tapenade for a different flavor profile.
- Add a sprinkle of parmesan cheese on top before baking for added richness.
- Allow the tart to cool for a few minutes before slicing to prevent the toppings from sliding off.
- This tart pairs wonderfully with a crisp green salad or a glass of chilled white wine.
