Ingredients
Sausage and Tater Tots
- 2 lb hot breakfast sausage
- 1 (30-32 oz) bag frozen tater tots
Seasonings
- 1 tsp salt
- 1/2 tsp pepper
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
Cheese
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
Egg Mixture
- 8 eggs
- 2 cups milk
Instructions
- Preheat and Prepare Pan: Preheat your oven to 350ºF (175ºC) and lightly spray a 9×13-inch baking pan with cooking spray to ensure the casserole doesn’t stick.
- Cook Sausage: In a large skillet over medium heat, cook the hot breakfast sausage until it is browned and no longer pink, breaking it up with a spoon as it cooks. Drain excess fat to avoid greasiness.
- Combine Tater Tots, Sausage, and Cheese: In a large mixing bowl, toss together the frozen tater tots, cooked sausage, shredded cheddar cheese, and shredded mozzarella cheese until evenly combined. Transfer this mixture into the prepared baking pan and spread it out evenly.
- Prepare Egg Mixture: In a separate bowl, whisk together the eggs, salt, pepper, garlic powder, onion powder, and milk until well blended and smooth.
- Pour Egg Mixture Over Tater Tot Mixture: Carefully pour the egg and milk mixture evenly over the tater tot, sausage, and cheese mixture in the baking pan, allowing it to seep through all layers.
- Optional Refrigeration: If you’re not ready to bake immediately, cover the casserole and refrigerate it at this point. This can help flavors meld and is convenient for prepping ahead.
- Bake: Bake the casserole uncovered in the preheated oven for 60 to 70 minutes, or until the eggs are fully set in the center and the top is lightly golden.
- Serve: Remove from oven and let the casserole cool slightly before slicing into servings. Enjoy your warm, comforting breakfast casserole!
Notes
- For a milder flavor, substitute hot breakfast sausage with mild sausage.
- You can add vegetables like diced onions, bell peppers, or mushrooms to the sausage while cooking for extra flavor and nutrition.
- Cover and refrigerate the assembled casserole for up to 24 hours before baking for convenience.
- Check the casserole near the end of baking; if the top browns too quickly, cover loosely with foil to prevent burning.
- Leftovers can be refrigerated for 3-4 days and reheated in the oven or microwave.
