Description

These Air Fryer Rice Paper Noodle Rolls are a crispy, healthy appetizer packed with vermicelli noodles, fresh vegetables, and a choice of tofu or shrimp. Perfectly air-fried for a golden crunch without deep frying, they pair wonderfully with sweet chili, peanut, or soy-ginger dipping sauces for a light yet satisfying snack or starter.

Ingredients

Rice Paper Rolls

  • 8 rice paper sheets
  • 1 cup cooked vermicelli noodles
  • 1/2 cup shredded carrots
  • 1 cup finely chopped cabbage
  • 1 block firm tofu or 8 cooked shrimp
  • 2 tablespoons green onion, sliced
  • 2 teaspoons grated ginger
  • 1 tablespoon minced garlic
  • 1 tablespoon soy sauce
  • 1 tablespoon Shaoxing wine or rice vinegar
  • 1 tablespoon sesame oil
  • 1/2 teaspoon sugar
  • Oil spray for air frying

Optional Dipping Sauce

  • Sweet chili sauce
  • Peanut sauce
  • Soy-ginger sauce

Instructions

  1. Soak Rice Paper: Soak one rice paper sheet in warm water for 10–15 seconds until it becomes soft and pliable, ready for rolling.
  2. Prepare Surface: Transfer the softened sheet onto a damp wooden board or clean towel to prevent sticking.
  3. Add Filling: Layer a small amount of cooked vermicelli noodles, shredded carrots, chopped cabbage, and your choice of tofu or shrimp in the center of the rice paper.
  4. Roll the Rice Paper: Fold in the sides of the rice paper, then roll tightly from the bottom upwards, similar to a burrito. Repeat this process with the remaining sheets and filling.
  5. Brush with Oil: Lightly brush or spray each roll with sesame oil or a neutral oil to help achieve a golden, crispy texture during air frying.
  6. Preheat Air Fryer: Preheat your air fryer to 375°F (190°C) for 2–3 minutes to ensure even cooking.
  7. Arrange Rolls: Place the rolls seam-side down in a single layer in the air fryer basket, making sure not to overcrowd them for optimal crisping.
  8. Air Fry Rolls: Cook the rolls for 8–10 minutes, flipping them halfway through the cooking time, until they are golden brown and crispy on both sides.
  9. Serve: Serve the crispy rice paper rolls hot along with your favorite dipping sauce such as sweet chili, peanut, or soy-ginger sauce for a delicious appetizer.

Notes

  • Soaking the rice paper just until pliable helps prevent tearing during rolling.
  • Use a damp surface for rolling to avoid sticking.
  • Light oil spray or brushing enhances crispiness in the air fryer.
  • Don’t overcrowd the air fryer basket to ensure even cooking.
  • Flipping halfway helps achieve uniform crispness on all sides.
  • Substitute tofu with cooked shrimp for a non-vegetarian option.
  • Pair with dipping sauces of your choice to enhance flavor.
