Instructions
- Preheat the oven: Set your oven to 375°F (190°C) to prepare for baking the pie.
- Sauté Veggies: In a large, deep skillet, melt the butter over medium-high heat. Add diced onions, thinly sliced zucchini, and sliced mushrooms. While these vegetables sauté, cut the corn kernels off the cobs. Add the corn kernels to the skillet, continue to cook and stir the vegetables until tender, about 5 to 10 minutes. Remove the skillet from the heat.
- Mix the filling: Allow the sautéed vegetable mixture to cool slightly for a few minutes. Then stir in dried basil, dried oregano, salt, shredded cheese, and beaten eggs until well combined.
- Prepare the pie pan: Line a 9-inch or larger pie pan with parchment paper or grease it well with nonstick cooking spray to prevent sticking.
- Assemble: Transfer the vegetable and egg mixture into the prepared pie pan. Arrange the thin zucchini slices neatly on top to give the pie an attractive appearance. Optionally sprinkle extra cheese on top for a golden finish.
