Description

A vibrant and refreshing Summer Peach Fruit Salad featuring ripe peaches, blackberries, blueberries, and pomegranate seeds tossed in a light honey, lime, and fresh basil dressing. This dairy-free, gluten-free, and vegetarian salad is a perfect, easy side dish for summer BBQs and parties.

Ingredients

Fruit

  • 4 large ripe (but not too ripe) yellow peaches, sliced
  • 1 cup blackberries
  • ¾ cup blueberries
  • Seeds from 1 medium pomegranate

Other

  • 6 large basil leaves, cut into ribbons
  • 1-2 teaspoons honey
  • ½ lime, juiced

Instructions

  1. Prepare the ingredients: Slice the peaches and cut the basil leaves into ribbons. Collect the seeds from the pomegranate and wash the blackberries and blueberries.
  2. Combine the fruit and basil: Add the sliced peaches, blackberries, blueberries, pomegranate seeds, and basil ribbons to a large mixing bowl.
  3. Dress the salad: Drizzle with 1 to 2 teaspoons of honey and the juice of half a lime over the fruit mixture.
  4. Toss gently: Using tongs, gently toss the salad to evenly coat all fruit pieces with the honey-lime dressing and to mix in the basil leaves.
  5. Serve or store: Serve immediately or store in an airtight container in the refrigerator for up to 2-4 days. For best presentation, add basil ribbons last if preparing ahead to keep their vibrant color.

Notes

  • You can prepare this fruit salad up to 1 day in advance; add basil ribbons last to maintain their color when tossing.
  • Store the salad in airtight containers in the refrigerator for 2 to 4 days for best freshness.
  • Customize by adding your favorite fruits or a sprinkle of nuts for extra texture and flavor.
