Base Ingredients

  • 8 oz cream cheese (or coconut cream, 240g)
  • 4 oz yogurt (or additional cream cheese or coconut cream, 120g)
  • 1 cup powdered sugar (or sugar-free alternative, 120g)

Fruit and Flavorings

  • 5 medium strawberries
  • 1/4 tsp vanilla bean paste (optional)


Instructions

  1. Prepare the Cream Base: If using cream cheese, allow it to come to room temperature for easy blending. If using coconut cream, ensure the can is opened and the contents are thick and creamy, separating from any liquid if necessary.
  2. Puree the Strawberries: Remove the stems from the strawberries and either blend them in a food processor or mash by hand until smooth to create the strawberry puree.
  3. Combine Ingredients: Add the cream cheese or coconut cream, yogurt, powdered sugar, and vanilla bean paste to the strawberry puree. Blend thoroughly using a food processor, blender, or hand mixer until the mixture is homogenous and smooth.
  4. Chill to Set: Transfer the mousse into serving dishes or bowls and refrigerate it. Allow it to chill for at least a few hours, as the mousse will thicken and set as it cools.
