Sticky Apple Cider Chicken

  • Kosher salt and pepper, to taste
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 to 2 tablespoons olive oil
  • ½ cup apple cider
  • ¼ cup maple syrup
  • ¼ cup water


Instructions

  1. Prepare the potatoes: Slice the peeled Yukon Gold potatoes into halves or quarters so all pieces are roughly the same size for even cooking.
  2. Boil the potatoes: Place the potato chunks in a large pot of cold salted water over medium heat. Bring to a boil and cook until fork-tender, about 12 to 15 minutes, checking at 10 minutes for smaller pieces.
  3. Warm butter and cream: While potatoes cook, heat 6 tablespoons unsalted butter and ⅔ cup heavy cream together in a saucepan over medium-low heat until warmed through.
  4. Drain and mash potatoes: Drain the potatoes thoroughly and return to the pot. Use a potato masher or ricer to mash to desired consistency.
