Description

This Spooky Carrot Soup is a comforting and visually fun recipe perfect for Halloween or any autumn day. Made with tender carrots, onions, potato, and garlic, simmered in chicken stock and water, then pureed to a smooth consistency. A drizzle of heavy cream creates a spooky spiderweb design, making it both delicious and festive.

Ingredients

Vegetables

  • 2 carrots (about 16.1 ounces or 457 grams)
  • 2 onions (about 9.3 ounces or 263 grams)
  • 1 potato (about 7.2 ounces or 203 grams)
  • 3 cloves garlic

Liquids & Seasonings

  • 1 cup water
  • 2 1/2 cups chicken stock
  • 1 teaspoon salt
  • 1 teaspoon ground pepper
  • 1/4 cup heavy cream

Instructions

  1. Prepare the vegetables: Peel the carrots, onions, potato, and garlic to ensure a smooth soup texture and remove any dirt or imperfections.
  2. Heat liquids: Place a pot over medium heat and add the water and chicken stock, bringing it to a gentle simmer to form the base of the soup.
  3. Cook the vegetables: Cut the peeled carrots, onions, and potato into chunks. Add them along with the garlic cloves to the pot. Let the mixture simmer for about 40 minutes, or until all the vegetables are soft, stirring occasionally to prevent sticking.
  4. Season the soup: Once the vegetables are tender, add salt and ground pepper to taste. For a milder flavor suitable for children, you may add the pepper later when serving.
  5. Puree the soup: Turn off the heat and use a hand blender to puree the soup until smooth. The turbo function on the blender helps achieve a silky texture.
  6. Serve the soup: Divide the pureed soup evenly into 3 cups or bowls for serving.
  7. Create the spiderweb design: Drizzle the heavy cream in a spiral pattern on top of the soup in each cup.
  8. Draw the spiderweb: Using a skewer, drag 8 lines from the center of the cup to the edge to create a spooky spiderweb effect on the cream drizzle.

Notes

  • For a vegetarian version, use vegetable stock instead of chicken stock.
  • You can adjust the seasoning to taste; omit or reduce pepper for children.
  • The soup can be stored in an airtight container in the refrigerator for up to 3 days.
  • Reheat gently on the stove or microwave before serving.
  • The spiderweb design is best done right before serving to keep the visual fresh.
