Ingredients
Spicy Tuna Filling
- 8 ounces sushi-grade bigeye or ahi tuna
- 2 tablespoons kewpie mayo
- 1 teaspoon toasted sesame oil
- 1 tablespoon low-sodium tamari (or soy sauce)
- 1 teaspoon chili crisp
- 2 teaspoons sriracha
- 1 green onion, minced
- ½ teaspoon kosher salt (or to taste)
Dipping Sauce
- ¼ cup low-sodium tamari (or soy sauce)
- 1 teaspoon chili crisp
Assembly
- 1 cup prepared sushi rice
- 1 cup julienned carrot
- 1 cup julienned cucumber
- 1 avocado, halved and sliced thin
- 1 jalapeño, thinly sliced
- 6 sushi nori seaweed wraps, cut in half lengthwise (to make 12 smaller rectangles)
Instructions
- Make the Spicy Tuna Filling: Using a sharp knife, finely dice the sushi-grade tuna into small, uniform pieces. In a medium bowl, mix together the diced tuna, kewpie mayo, toasted sesame oil, tamari, chili crisp, sriracha, and minced green onion. Gently fold to combine all ingredients evenly. Taste the mixture and adjust seasoning by adding kosher salt if needed. Refrigerate the mixture until ready to use.
- Prepare the Dipping Sauce: In a small bowl, combine the low-sodium tamari and chili crisp, mixing well. Set aside to serve alongside the hand rolls.
- Assemble the Hand Rolls: Place a piece of nori on a flat surface, shiny side down. Spoon a small amount of prepared sushi rice onto the left corner of the nori and spread it thinly. Add a small scoop of the spicy tuna mixture on top of the rice. Layer with a few strips of julienned carrot, cucumber, several thin slices of avocado, and one or two jalapeño slices for heat.
- Roll the Hand Rolls: Starting from the bottom left corner with the fillings, fold the nori up and over to enclose the ingredients. Continue rolling at an angle to shape a cone, pressing gently to seal the open edge. Repeat this process with the remaining nori and fillings until all 12 hand rolls are assembled.
- Serve: Serve the spicy tuna hand rolls immediately with the prepared dipping sauce on the side for extra flavor.
