Ingredients
Cookie Dough
- 1 cup (2 sticks) butter, softened
- 1 cup oil
- 1 cup white sugar
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 2 tsp almond extract
- 2 eggs
- 1 tsp baking soda
- 1 tsp cream of tartar
- 1 tsp salt
- 4 cups plus 2 Tbsp all-purpose flour
Frosting and Decoration
- 2 cans vanilla frosting (or use your favorite vanilla buttercream recipe)
- Pink food coloring
- Assorted sprinkles
Instructions
- Prepare the Dough: In the bowl of a stand mixer, cream together the softened butter, oil, white sugar, and powdered sugar until the mixture is creamy and fluffy, which should take about 2 minutes. Add in the vanilla and almond extracts, followed by the eggs, mixing until all are fully incorporated. Gradually add the baking soda, cream of tartar, salt, and flour, beating slowly until combined into a soft dough. Refrigerate the dough for at least one hour or up to overnight to firm up.
- Bake the Cookies: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats. Drop rounded tablespoonfuls of the chilled dough onto the baking sheets, spacing them 1 to 2 inches apart to allow for spreading. Bake for about 9 to 11 minutes, rotating the pans halfway through for even baking, until the cookies are lightly golden and set. Let them cool on the baking sheets for about 10 minutes before transferring them to a wire rack to cool completely.
- Frost and Decorate: Once the cookies have completely cooled to room temperature, prepare your frosting by stirring in pink food coloring to your desired shade into the vanilla frosting. Fill a piping bag fitted with a closed star tip, or use a spatula to spread the frosting onto each cookie. Top with assorted sprinkles to add a festive touch. Allow the frosting to set for approximately 15 minutes before serving to ensure it holds nicely.
Notes
- For best texture, refrigerate the dough for at least one hour before baking to prevent excessive spreading.
- Use a piping bag with a closed star tip for decorative frosting or simply spread with a knife for a rustic look.
- Store cookies in an airtight container at room temperature for up to 3 days, or refrigerate to extend freshness.
- You can substitute almond extract with additional vanilla extract if preferred.
- For a dairy-free version, use a vegan butter and dairy-free frosting.
