Ingredients
For the Bowl
- 1 lb ground beef (lean preferred)
- 1 lb red potatoes, diced
- 1–2 cups shredded cheddar or Colby Jack cheese
- 1 cup chopped lettuce or mixed greens
- 1 small onion, diced
- 1–2 tablespoons olive oil
- Salt and black pepper, to taste
For the Special Sauce
- ½ cup mayonnaise
- ¼ cup ketchup
- 1 tablespoon yellow or Dijon mustard
- ½ teaspoon Cajun seasoning (adjust to taste)
Optional Toppings
- Pickles
- Extra lettuce
- Fresh parsley (for garnish)
Instructions
- Cook the potatoes: Preheat air fryer to 400°F. Toss the diced potatoes with olive oil, salt, and black pepper. Air fry for 16–18 minutes, shaking the basket halfway through to ensure even cooking, until the potatoes are golden brown and crispy.
- Caramelize the onions: Heat a skillet over medium-low heat and add a small amount of olive oil. Add the diced onions and cook for 10–15 minutes, stirring occasionally, until the onions are soft and have turned a golden color. Remove from heat and set aside.
- Cook the beef: Using the same skillet, increase the heat to medium-high. Add the ground beef, break it up with a spatula, and press it into the pan firmly to create crispy edges. Cook for 5–7 minutes until the beef is well browned. Season with salt and black pepper to taste. Drain any excess fat if necessary.
- Make the sauce: In a small bowl, whisk together mayonnaise, ketchup, mustard, and Cajun seasoning until the mixture is smooth and well combined.
- Assemble the bowls: Divide the crispy potatoes into serving bowls. Top each with the cooked ground beef, caramelized onions, and shredded cheese. Drizzle the special sauce over the top and finish with chopped lettuce and any optional toppings such as pickles, extra lettuce, or fresh parsley for garnish.
Notes
- Swap potatoes for rice, cauliflower rice, or more lettuce for a lower-carb or different variation.
- Ground turkey or plant-based crumbles can be used in place of ground beef for a different protein option.
- Store each component separately for best results when meal prepping to maintain freshness and texture.
- The special sauce can be prepared up to 3 days ahead and kept refrigerated for convenience.
