Instructions
- Make Batter: Add cottage cheese, egg, flour, baking powder, and salt to a blender in this order and blend until smooth to create a well-mixed pancake batter.
- Melt Butter: Heat a nonstick pan over medium-high heat for about a minute, then add the butter and allow it to melt completely, coating the pan surface.
- Cook Pancake: Pour all the batter into the pan to make one large pancake. This single-serve approach creates a thick, buttery pancake perfect for one person.
- Flip and Finish: Cook until bubbles form on the surface, about 1-2 minutes. Check that the bottom is golden brown, then carefully flip the pancake and cook for another 1-2 minutes until cooked through and golden on both sides.
