Description

Instructions

  1. Beat Eggs: In a small mixing bowl, beat together 2 large eggs and a pinch of fine sea salt until the mixture becomes foamy, ensuring the eggs are well incorporated and light.
  2. Heat Skillet and Add Butter: Place a small nonstick skillet over medium heat and swirl in 1/2 tablespoon of unsalted butter. Wait until the butter is fully melted and starts bubbling but not browned.
  3. Add Eggs and Reduce Heat: Pour the foamy egg mixture into the skillet immediately after the butter is melted, then reduce the heat to low to cook the eggs gently without burning.
  4. Stir and Set Eggs: Using a spatula, gently pull the cooked edges of the eggs towards the center, allowing the uncooked liquid egg to flow to the edges. Continue this around the pan until the eggs are nearly set but still slightly runny on top.
  5. Flip Omelette: When the omelette can slide freely and a spatula can be slipped underneath easily, carefully flip the entire omelette over, then immediately turn off the heat to prevent overcooking.
  6. Add Cheese and Fold: Sprinkle 1/4 cup shredded mozzarella evenly over the cooked side of the omelette, then fold it in half to enclose the cheese and fillings.
