- 3 cloves garlic, minced

Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking and make cleanup easier.
- Prepare Potatoes: Slice the baby potatoes in half and arrange them on the parchment-lined baking sheet.
- Oil and Season: Drizzle olive oil over the potatoes, toss to evenly coat them, then sprinkle with salt and pepper. Toss again directly on the sheet to distribute seasoning thoroughly.
- Arrange for Roasting: Place the potatoes cut side down in a single layer on the baking sheet, ensuring they have space between them so they roast evenly without steaming.
- Initial Roast: Put the potatoes in the oven and roast for 20 minutes. Keep an eye on them, looking for the bottoms to start browning and crisping up.
- Herb Butter Toss: Remove the pan from the oven and gently toss the potatoes with melted butter, minced garlic, rosemary, and thyme to infuse them with flavor.
- Final Roast: Return the potatoes cut side up to the oven and roast for an additional 8 to 10 minutes until golden and cooked through.
