Description

These Roasted Baby Potatoes are crispy on the outside and tender on the inside, infused with aromatic herbs and garlic. Perfect as a comforting side dish or snack, roasted to golden perfection in the oven with olive oil, butter, and fresh herbs.

Ingredients

Potatoes

  • lbs baby potatoes, sliced in half

Seasonings & Herbs

  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp pepper
  • 1 tbsp freshly chopped parsley
  • 1 tsp finely chopped rosemary
  • 1 tsp fresh thyme leaves
  • 3 cloves garlic, minced
  • 1 tsp melted butter

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking and make cleanup easier.
  2. Prepare Potatoes: Slice the baby potatoes in half and arrange them on the parchment-lined baking sheet.
  3. Oil and Season: Drizzle olive oil over the potatoes, toss to evenly coat them, then sprinkle with salt and pepper. Toss again directly on the sheet to distribute seasoning thoroughly.
  4. Arrange for Roasting: Place the potatoes cut side down in a single layer on the baking sheet, ensuring they have space between them so they roast evenly without steaming.
  5. Initial Roast: Put the potatoes in the oven and roast for 20 minutes. Keep an eye on them, looking for the bottoms to start browning and crisping up.
  6. Herb Butter Toss: Remove the pan from the oven and gently toss the potatoes with melted butter, minced garlic, rosemary, and thyme to infuse them with flavor.
  7. Final Roast: Return the potatoes cut side up to the oven and roast for an additional 8 to 10 minutes until golden and cooked through.
  8. Finish and Serve: Take the potatoes out of the oven, toss with freshly chopped parsley, adjust seasoning with salt and pepper to taste, and serve warm for the best flavor and texture.

Notes

  • Make sure the potatoes are cut uniformly to ensure even roasting.
  • Spacing the potatoes apart helps them crisp better rather than steam.
  • Use fresh herbs for the best aromatic flavor, but dried herbs can be substituted if needed.
  • For extra crispiness, you can increase the initial roasting time by a few minutes if desired.
  • This dish pairs wonderfully with grilled meats, roasted chicken, or as a hearty addition to a vegetarian meal.
