Ingredients

Crust

  • 2 1/2 cups graham cracker crumbs
  • 12 tablespoons unsalted butter, melted

Cream Cheese Mixture

  • 2 (8 oz.) packages cream cheese, softened
  • 1 cup confectioners’ sugar
  • 4 cups whipping cream
  • 2 teaspoons vanilla extract, divided
  • 6 tablespoons granulated sugar

Mixed Fruit Filling

  • 1 (21 oz.) can strawberry pie filling
  • 1 (21 oz.) can blueberry pie filling


Instructions

  1. Prepare the Crust: In a bowl, combine graham cracker crumbs and melted butter. Blend with a fork until the crumbs are evenly moistened. Set aside 3 tablespoons of the crumb mixture to sprinkle on top later. Press the remaining crumb mixture firmly into the bottom of a 9×13-inch pan sprayed with non-stick cooking spray to form the crust layer.
  2. Prepare the Cream Cheese Mixture: Using an electric mixer, beat the softened cream cheese, confectioners’ sugar, and 1 teaspoon vanilla extract until smooth and creamy. In a separate bowl, whip the whipping cream, granulated sugar, and remaining 1 teaspoon vanilla extract until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture by hand until well combined and light.
  3. Assemble the Yum Yum Layers: Spread approximately one-third of the cream cheese and whipped cream mixture (about 3 cups) evenly over the prepared crust. Drop large spoonfuls of strawberry pie filling on top of this layer and gently spread it evenly, connecting the dollops. Spread another one-third of the cream cheese mixture over the strawberry layer, covering it completely. Next, drop large spoonfuls of blueberry pie filling onto the cream cheese layer and gently spread evenly. Finally, top with the remaining one-third of the cream cheese mixture, spreading it over the blueberry layer to cover it fully.
  4. Final Touch and Chill: Sprinkle the reserved 3 tablespoons of graham cracker crumbs evenly over the top layer. Cover the pan with plastic wrap and refrigerate overnight. This extended chilling time helps the layers set properly and prevents them from sliding apart when served.
