Ingredients
Crust
- 2 1/2 cups graham cracker crumbs
- 12 tablespoons unsalted butter, melted
Cream Cheese Mixture
- 2 (8 oz.) packages cream cheese, softened
- 1 cup confectioners’ sugar
- 4 cups whipping cream
- 2 teaspoons vanilla extract, divided
- 6 tablespoons granulated sugar
Mixed Fruit Filling
- 1 (21 oz.) can strawberry pie filling
- 1 (21 oz.) can blueberry pie filling
Instructions
- Prepare the Crust: In a bowl, combine the graham cracker crumbs and melted butter. Use a fork to blend until the crumbs are fully moistened. Set aside 3 tablespoons of this crumb mixture for sprinkling on top later. Press the remaining crumb mixture firmly into the bottom of a 9×13-inch pan coated with non-stick cooking spray to form an even crust layer.
- Prepare the Cream Cheese Mixture: Using an electric mixer, beat the softened cream cheese, confectioners’ sugar, and 1 teaspoon of vanilla extract until the mixture is smooth and creamy. In a separate bowl, whip the whipping cream with granulated sugar and the remaining 1 teaspoon vanilla extract until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture by hand until fully combined, ensuring a light and fluffy texture.
- Assemble the Yum Yum Layers: Spread about one-third (approximately 3 cups) of the cream cheese and whipped cream mixture evenly over the prepared crust. Dollop the strawberry pie filling on top in large spoonfuls, then gently spread it evenly over the cream cheese layer to connect the dollops. Add another one-third of the cream cheese mixture over the strawberry layer, spreading it gently and evenly to cover completely. Repeat the process with the blueberry pie filling, dolloping and spreading it over the cream cheese layer, then topping with the remaining cream cheese mixture. Finally, sprinkle the reserved 3 tablespoons of graham cracker crumbs over the top layer.
- Chill and Serve: Cover the assembled dessert securely and refrigerate overnight to allow the layers to set and meld together. This chilling step is important to prevent layers from sliding apart when cut and served. After chilling, slice and serve chilled for a perfect refreshing treat.
