Description

Enjoy these colorful and healthy Rainbow Fruit Skewers made with five types of fresh fruit and finished with a delicious drizzle of melted dark chocolate. Perfect as a fun snack or a light dessert, these skewers are kid-friendly, dairy-free, gluten-free, grain-free, nut-free, and paleo friendly.


Ingredients

Fruits

  • 6 strawberries, hulled
  • 1 orange, peeled, segmented and cut in half
  • ½ of a ripe pineapple, peeled, cored and cut into 1-inch chunks (about 1 ½ cups pineapple chunks)
  • 1 banana, cut into 1-inch slices
  • 2 kiwi fruit, peeled and cut into 1-inch chunks

Chocolate Drizzle

  • 1 bar of semi-sweet or dark chocolate, vegan or dairy free if desired
  • Optional: flaky sea salt for sprinkling


Instructions

  1. Prepare the Fruit Skewers: Arrange the fruit pieces on wooden skewers in rainbow order, starting with strawberry, then orange, pineapple, banana, and kiwi. Place the finished skewers on a large plate or a baking pan lined with parchment or wax paper.
  2. Melt the Chocolate: Break the chocolate bar into smaller pieces and place into a microwave-safe bowl. Heat in 30-second intervals, stirring between each, until the chocolate is completely melted and smooth.
  3. Drizzle Chocolate and Finish: Drizzle the melted chocolate evenly over the fruit skewers. If desired, sprinkle with flaky sea salt for an extra flavor touch.
  4. Set the Chocolate: Place the plate of skewers in the freezer for about 5 minutes, or until the chocolate hardens. Serve immediately and enjoy this refreshing, colorful treat.
