- 1 tablespoon butter
- 1 medium onion, chopped
- 3 cloves garlic
- ¼ cup chopped sage
- 2 tablespoons fresh thyme leaves
- 1 teaspoon salt
- 1 teaspoon pepper
- 28 ounce can diced or whole tomatoes
- 15 ounce can pumpkin puree
- 3 cups chicken broth
- 1 cup half and half
- 1-3 teaspoons sugar (optional – see notes)

- 12 medium sage leaves

- Cook Onion: Melt 1 tablespoon of butter in a large pot over medium heat. Add the chopped onion and cook, stirring occasionally, until the onion becomes transparent and soft, about 5 minutes. Add the garlic, chopped sage, fresh thyme leaves, salt, and pepper and cook for an additional 1 minute to release their flavors.
- Blend Soup Base: Transfer the cooked onion, garlic, and herbs to a blender. Add the canned tomatoes and pumpkin puree. Blend on high speed until the mixture is completely smooth and well incorporated.
- Simmer Soup: Pour the blended mixture back into the pot. Use a little of the chicken broth to rinse out the blender and add that to the pot as well, then add the remaining broth. Bring the soup to a boil, then reduce the heat and simmer uncovered for 15 minutes, stirring occasionally to prevent sticking.
- Make Crispy Sage Butter: While the soup simmers, melt 2 tablespoons of butter in a frying pan over medium heat. When the butter starts to foam, add the sage leaves. Cook for 1 minute, then flip the leaves and cook for an additional 2 minutes until the sage is crispy. Remove from heat and set aside.
- Finish and Serve: Stir the half and half into the simmered soup. Taste and add 1-3 teaspoons of sugar if needed to adjust sweetness along with any additional salt. Serve the soup hot, drizzled with the crispy sage butter and topped with a few crispy sage leaves and croutons for texture.
