Ingredients
Main Ingredients
- 8 ounce block cream cheese, softened to room temperature
- 8 ounce tub vegetable cream cheese
- 2 Tablespoons Hidden Valley Spicy Ranch mix (or regular ranch)
- 3 green onions, sliced (green parts only, can use whites if preferred)
- 1 red pepper, finely diced (save the stem for garnish)
- 2 cups shredded sharp cheddar cheese, divided
Instructions
- Combine Cream Cheeses: Using an electric or stand mixer, blend together the softened 8 ounce block cream cheese and the 8 ounce tub of vegetable cream cheese until smooth and creamy.
- Add Seasoning and Vegetables: Stir in 2 tablespoons of Hidden Valley Spicy Ranch mix, the sliced green onions, finely diced red pepper (reserve the stem), and 1 cup of shredded sharp cheddar cheese into the cream cheese mixture until well incorporated.
- Prepare Surface and Base Cheese Layer: Spread out a large sheet of plastic wrap on your work surface. Sprinkle about 1/4 cup of shredded cheddar cheese evenly onto the plastic wrap to create a base layer.
- Shape Cheeseball: Place the cheese mixture on top of the cheddar cheese base. Then, sprinkle the remaining shredded cheddar cheese over the top and sides of the cheese mixture evenly.
- Wrap Tightly: Wrap the cheeseball tightly with two layers of cling wrap ensuring no mixture escapes. Wrap the cheeseball securely with four large rubber bands or kitchen twine to create indentations resembling a pumpkin shape. Double wrap the rubber bands if necessary for deeper grooves.
- Refrigerate: Place the wrapped cheeseball into the fridge for a minimum of 2 hours, preferably overnight. This resting period lets the flavors meld and helps the shape set firmly.
- Unwrap and Garnish: Remove the cheeseball from the fridge, carefully cut off the rubber bands and unwrap the cling wrap. Insert the saved red pepper stem gently on top of the cheeseball to complete the pumpkin look.
- Serve: Present the pumpkin cheeseball with your favorite buttery crackers for an irresistible appetizer.
Notes
- For best flavor and shape, chill the cheeseball overnight instead of just 2 hours.
- If you want less spice, use regular Hidden Valley Ranch mix instead of the spicy version.
- You can use white parts of green onions if preferred, but the green parts add color and mild flavor.
- This recipe is best served chilled, so keep refrigerated until ready to serve.
- Rubber bands create the pumpkin indentations; kitchen twine can be used as an alternative.
- To soften cream cheese quickly, leave it out at room temperature for about 30 minutes before starting.
