Cheeseball Mixture
- 8 ounce block cream cheese (softened to room temperature)
- 8 ounce tub vegetable cream cheese
- 2 Tablespoons Hidden Valley Spicy Ranch mix (or regular ranch)
- 3 green onions, sliced (green parts only, optional use whites)
- 1 red pepper, finely diced (save the stem)
- 1 cup shredded sharp cheddar cheese (for mixing)

- 1 red pepper stem (for pumpkin stem)
Instructions
- Combine Cream Cheeses and Seasoning: Using an electric or stand mixer, combine the softened 8 ounce block of cream cheese with the 8 ounce tub of vegetable cream cheese until smooth and well blended.
- Add Flavorings: Stir in 2 tablespoons of Hidden Valley Spicy Ranch mix, sliced green onions, finely diced red pepper (except the stem), and 1 cup of shredded sharp cheddar cheese. Mix thoroughly to incorporate all ingredients evenly.
- Prepare Wrapping Surface: Spread a large sheet of plastic wrap onto your work surface and sprinkle about 1/4 cup of shredded cheddar cheese evenly over the plastic wrap. This prevents sticking and adds texture.
- Shape Cheeseball: Spoon the cheese mixture onto the center of the cheddar cheese-covered plastic wrap and form it into a pumpkin-like ball shape.
- Coat the Cheeseball: Sprinkle the remaining shredded cheddar cheese evenly over the top and sides of the cheese ball. Wrap it tightly with plastic wrap, ideally two layers, ensuring it’s well sealed.
- Create Pumpkin Indentations: Secure the wrapped cheeseball with four large, wide rubber bands spaced around it. Double-wrap the bands if needed to create deep grooves that resemble pumpkin ridges, shaping the ball accordingly.
- Chill: Place the cheeseball in the refrigerator for at least two hours, preferably overnight. Chilling will firm up the shape and enhance the flavors.
- Final Touches and Serve: When ready to serve, cut off the rubber bands and carefully remove the plastic wrap. Insert the saved red pepper stem into the top center as the pumpkin stem. Serve with your favorite buttery crackers.
