Description

This Pumpkin Shaped Baked Brie is a festive and elegant appetizer perfect for fall gatherings. Wrapped in buttery puff pastry and adorned with fig jam, pecans, and a decorative stem, it bakes to a golden perfection that looks as good as it tastes. Served with crackers, fresh fruit, and fall cookies, it’s an irresistible centerpiece for any cheese board or holiday party.

Ingredients

For the Pumpkin Brie:

  • 1 sheet all-butter puff pastry (thawed but still cold, such as Dufour) or gluten-free puff pastry
  • 2 – 3 tablespoons fig jam (a thick variety)
  • 3 tablespoons pecans, chopped (praline or toasted)
  • 8 ounces round triple cream brie cheese (rind on top, carefully trimmed or scored)
  • 1 large egg yolk (beaten with 1 tablespoon water for egg wash)
  • Flaky sea salt (optional, for sprinkling)
  • 1 cinnamon stick, bell pepper stem, or half a pretzel rod (for stem)
  • 1 toothpick (if using bell pepper stem)
  • 2 – 3 fresh sage leaves (for garnish)

For Serving:

  • Crackers (such as Carr’s water crackers, Raincoast Crisps, or gluten-free crackers)
  • Toasted baguette slices (crostini)
  • Sliced apples, grapes, or fresh berries
  • Ginger snaps or other fall-themed cookies

Instructions

  1. Prepare the Brie: Line a rimmed baking sheet with parchment paper. Trim a thin layer of rind off the top of the brie or score the top in a crisscross pattern about 1 inch apart. Scoring is a quicker option, both methods work well.
  2. Roll Out Puff Pastry: On a lightly floured surface, roll the puff pastry into a 10 to 12-inch square or rectangle, being careful not to roll it too thin to avoid tearing.
  3. Assemble Layers: Spread fig jam in a circular shape at the center of the pastry, about the size of the brie. Sprinkle chopped pecans evenly over the jam, then set the brie on top with the trimmed or scored side facing down.
  4. Shape the Pastry: Trim the corners to round off the pastry edges. Run a wet fingertip along the edges to help seal. Wrap the brie by folding the pastry up and over the cheese, pinching edges gently to seal. Save and bake leftover scraps later.
  5. Add Twine for Pumpkin Shape: Cut four 20-inch pieces of kitchen twine. Arrange them on parchment paper crossing at center like spokes, dividing into 8 sections. Place the wrapped brie in the center with the seam side up.
  6. Create Pumpkin Ridges: One string at a time, bring both ends together over the seam and tie snugly to press a shallow groove into the pastry. Double knot and repeat with the remaining strings. Trim excess twine.
  7. Flip and Chill: Carefully flip the brie onto the lined baking sheet, smooth side up and knots underneath. Refrigerate at least 20 minutes to firm up pastry. Meanwhile, preheat oven to 400°F (205°C).
  8. Apply Egg Wash: Whisk the egg yolk with water. Brush the entire chilled pastry surface evenly, including over the twine. Optionally sprinkle flaky sea salt on top.
  9. Bake the Brie: Bake for 25 to 35 minutes, rotating pan halfway, until the pastry turns a deep golden brown. If pastry looks pale or gummy, use oven convection for the last 5 minutes to crisp fully.
  10. Prepare Serving Board: While baking, arrange crackers, fruit, nuts, salami rosettes, and fall cookies on a board with space reserved for the baked brie.
  11. Rest the Brie: Remove from oven and let rest 5 to 15 minutes (15 minutes recommended for triple cream brie) to allow cheese to soften without spilling.
  12. Remove Twine: Snip each string at the top crossing, and gently slide them off one by one. Lift out knots carefully with a spatula underneath. Ensure no string pieces remain.
  13. Add the Stem and Garnish: Insert your choice of stem – for bell pepper stem, secure with a toothpick and press into top center; cinnamon stick or pretzel rod can be pushed directly in. Arrange sage leaves around it for decoration.
  14. Serve: Present the Pumpkin Shaped Baked Brie with a cheese knife so guests can cut their own wedges and enjoy with crackers, fruit, and fall cookies.

Notes

  • If fig jam is unavailable, substitute with apricot preserves or honey for a similarly sweet contrast to the cheese.
  • Triple cream brie is recommended for its creamy melting qualities, but standard brie can also be used.
  • Chilling the wrapped brie before baking is crucial to maintain the pumpkin shape and prevent pastry from shrinking.
  • Adjust baking time based on your oven: pastries should be a deep golden brown for best texture and flavor.
  • Using kitchen twine helps create the appearance of pumpkin grooves but be sure to remove all twine before serving.
