Ingredients
Broth and Liquid
- 4 cups low-sodium vegetable broth
Base Ingredients
- 3 tablespoons unsalted butter
- 1 small yellow onion, finely diced
- 1 garlic clove, minced
- 5 sage leaves, minced
- 1 cup Arborio rice
- 1 teaspoon salt
- ⅛ teaspoon nutmeg
- 1 cup pumpkin puree
- ½ cup freshly grated Parmesan cheese
- 1 tablespoon red wine vinegar
Instructions
- Heat Broth: In a medium saucepan, bring the vegetable broth to a boil, then reduce heat to low and keep at a gentle simmer throughout the cooking process.
- Sauté Aromatics: In another medium saucepan, melt the butter over medium heat. Add the finely diced onion and cook, stirring occasionally, until softened and translucent, about 5 minutes. Add the minced garlic and sage, cooking while stirring until fragrant, about 1 minute.
- Toast Rice: Add the Arborio rice, salt, and nutmeg to the onion mixture. Stir constantly to coat the rice with the buttery mixture and toast lightly, approximately 3 minutes.
- Add Broth Gradually: Using a ladle, add ½ cup of the simmering broth to the rice mixture. Stir gently until the liquid is almost fully absorbed, about 2-3 minutes. Continue adding broth ½ cup at a time, allowing each addition to be absorbed before adding the next, stirring occasionally. This process will take about 20 minutes total for all broth to be incorporated.
- Finish Risotto: Remove the saucepan from heat. Stir in the pumpkin puree, freshly grated Parmesan cheese, and red wine vinegar until well combined and creamy. Serve immediately for the best texture.
Notes
- My Top Tip: Do not rinse the Arborio rice before cooking; the natural starches help create the creamy, sticky texture characteristic of risotto.
- Storage: Leftovers can be stored in an airtight container in the refrigerator for 2-3 days. Reheat gently in a microwave with a splash of vegetable broth and optionally some additional butter or Parmesan cheese to restore creaminess. Freezing is not recommended as it affects texture.
