Description

These Pumpkin Pie Energy Bites are a delicious and nutritious snack, combining the warm flavors of pumpkin pie spice with wholesome ingredients like rolled oats, flax meal, and almond butter. Perfect for a quick energy boost, they are easy to make, require no baking, and can be stored in the fridge or freezer for convenience.

Ingredients

Dry Ingredients

  • 1 cup gluten-free rolled oats
  • 1/4 cup flax meal
  • 2 teaspoons pumpkin pie spice
  • 2 tablespoons mini chocolate chips (dairy-free if needed)

Wet Ingredients

  • 1/4 cup almond butter
  • 5 tablespoons unsweetened pumpkin purée
  • 3 tablespoons maple syrup
  • 1 teaspoon vanilla extract

Instructions

  1. Combine Wet Ingredients: In a medium-sized bowl, add the almond butter, pumpkin purée, maple syrup, and vanilla extract. Stir thoroughly until the mixture is smooth and evenly combined.
  2. Add Dry Ingredients: Add the gluten-free rolled oats, flax meal, pumpkin pie spice, and mini chocolate chips to the wet mixture. Stir well to ensure all the ingredients are fully incorporated into a uniform dough-like consistency.
  3. Form Energy Bites: Roll the mixture into approximately 1-inch-sized balls using your hands. Make sure they are compacted well to hold together.
  4. Store Properly: Place the energy bites in a single layer inside an airtight container lined with parchment or wax paper. Store them in the refrigerator to keep fresh for several days or freeze for long-term storage up to several months.

Notes

  • For a nut-free version, substitute almond butter with sunflower seed butter or tahini.
  • Use dairy-free mini chocolate chips to keep the bites vegan and allergy-friendly.
  • These bites can be refrigerated for up to 5 days or frozen for up to 3 months.
  • Adjust the sweetness by adding more or less maple syrup according to your preference.
