Glaze
- 1/2 cup (106.5 g) packed light brown sugar
- 2 tbsp unsalted butter
- 2 tbsp light corn syrup
Topping
- 16 whole raw pecans
Instructions
- Prepare filling: Arrange oven racks in the upper and lower thirds and preheat the oven to 350°F (175°C). In a medium bowl, combine finely chopped pecans, 1/2 cup brown sugar, and 4 tablespoons softened butter. Mix thoroughly to create the pecan filling.
- Fill biscuits: Halve each biscuit from the Pillsbury Grands can crosswise. Place about 2 teaspoons of the pecan filling into the center of each biscuit half. Roll the biscuit dough around the filling into a ball, ensuring the seam is on the bottom. Arrange the filled biscuit balls seam side down on two parchment-lined baking sheets.
- Bake biscuit bites: Place the baking sheets in the oven, one on the upper rack and one on the lower rack. Bake for 10 to 12 minutes, rotating the sheets from top to bottom halfway through baking, until the biscuit bites are puffy, doubled in size, and golden brown. Remove from oven and transfer to a wire rack to cool.
- Make caramel glaze: While the biscuit bites bake, heat a medium skillet over medium-high heat. Add light corn syrup, remaining 1/2 cup brown sugar, and 2 tablespoons butter.
