Description

These Peanut Butter Rice Krispie Treats are a delightful twist on a classic favorite, combining the creamy richness of peanut butter with crispy cereal and a decadent chocolate topping. Perfect for a sweet snack or party treat, they’re easy to make and sure to satisfy any sweet tooth.

Ingredients

Main Ingredients

  • 1/4 cup unsalted butter
  • 1 (10 oz) bag mini marshmallows (about 5 cups)
  • 1/2 cup peanut butter
  • 6 cups Rice Krispie cereal

Chocolate Topping

  • 8 oz chocolate chips (about 1 1/3 cups)
  • 2 teaspoons vegetable oil

Instructions

  1. Prepare the Pan: Lightly grease a 9×13 inch pan with butter or non-stick cooking spray to prevent sticking.
  2. Melt Ingredients: In a large saucepan over low heat, melt the butter, mini marshmallows, and peanut butter together, stirring gently to combine into a smooth mixture.
  3. Add Cereal: Remove the saucepan from heat and stir in the Rice Krispie cereal until all pieces are well coated with the marshmallow-peanut butter mixture.
  4. Press into Pan: Transfer the mixture to the prepared pan and press it down firmly. Lightly spray your hands with non-stick cooking spray to prevent the mixture from sticking while pressing.
  5. Melt Chocolate: Place chocolate chips in a medium heatproof bowl and microwave on medium power in 45-second intervals, stirring between each, until the chocolate is almost melted. Stir until smooth, then mix in the vegetable oil to create a glossy chocolate topping.
  6. Top the Bars: Pour the melted chocolate over the pressed cereal mixture and spread evenly across the surface.
  7. Set and Harden: Let the chocolate-topped treats set and harden at room temperature for about 2 hours.
  8. Serve and Store: Once set, cut into squares. Store the treats in an airtight container at room temperature to maintain freshness.

Notes

  • For easier mixing and pressing, lightly spray your hands or use a spatula to handle the sticky mixture.
  • Make sure to microwave the chocolate on medium power to avoid burning and to achieve a smooth consistency.
  • These treats can be stored at room temperature for up to 3 days, or refrigerated for longer freshness.
  • Feel free to use crunchy or smooth peanut butter depending on your texture preference.
  • Optional: Sprinkle some chopped peanuts on top of the chocolate before it hardens for an added crunch.
