Ingredients
Main Ingredients
- 1/4 cup unsalted butter
- 1 (10 oz) bag mini marshmallows (about 5 cups)
- 1/2 cup peanut butter
- 6 cups Rice Krispie cereal
Chocolate Topping
- 8 oz chocolate chips (about 1 1/3 cups)
- 2 teaspoons vegetable oil
Instructions
- Prepare the Pan: Lightly grease a 9×13 inch pan with butter or non-stick cooking spray to prevent sticking.
- Melt Ingredients: In a large saucepan over low heat, melt the butter, mini marshmallows, and peanut butter together, stirring gently to combine into a smooth mixture.
- Add Cereal: Remove the saucepan from heat and stir in the Rice Krispie cereal until all pieces are well coated with the marshmallow-peanut butter mixture.
- Press into Pan: Transfer the mixture to the prepared pan and press it down firmly. Lightly spray your hands with non-stick cooking spray to prevent the mixture from sticking while pressing.
- Melt Chocolate: Place chocolate chips in a medium heatproof bowl and microwave on medium power in 45-second intervals, stirring between each, until the chocolate is almost melted. Stir until smooth, then mix in the vegetable oil to create a glossy chocolate topping.
- Top the Bars: Pour the melted chocolate over the pressed cereal mixture and spread evenly across the surface.
- Set and Harden: Let the chocolate-topped treats set and harden at room temperature for about 2 hours.
- Serve and Store: Once set, cut into squares. Store the treats in an airtight container at room temperature to maintain freshness.
Notes
- For easier mixing and pressing, lightly spray your hands or use a spatula to handle the sticky mixture.
- Make sure to microwave the chocolate on medium power to avoid burning and to achieve a smooth consistency.
- These treats can be stored at room temperature for up to 3 days, or refrigerated for longer freshness.
- Feel free to use crunchy or smooth peanut butter depending on your texture preference.
- Optional: Sprinkle some chopped peanuts on top of the chocolate before it hardens for an added crunch.
