Instructions

  1. Preheat the oven: Preheat your oven to 375℉ (190℃) and prepare a 9×9 or 8×8-inch baking dish by misting it with cooking spray to prevent sticking.
  2. Combine wet and dry ingredients: In a medium bowl, stir together the rolled oats, milk, plain Greek yogurt, eggs, avocado oil, maple syrup or honey, vanilla extract, baking powder, ground cinnamon, ground nutmeg, and fine salt until everything is evenly mixed.
  3. Fold in peaches: Gently fold the diced fresh peaches into the oat mixture to distribute the fruit throughout the batter without breaking it down.
  4. Transfer to baking dish: Pour the mixture into the prepared baking dish, smoothing the top evenly. For an attractive presentation, optionally arrange a few peach slices on top before baking.
