Ingredients
Potatoes
- 1 1/2 pounds redskin potatoes
- 2 tablespoons olive oil
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1 tablespoon BBQ seasoning blend
Salmon
- 1 (2-pound) side of salmon
- 1 tablespoon olive oil
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1 tablespoon BBQ seasoning blend
- Optional: BBQ sauce for serving
Instructions
- Prepare the potatoes: Dice the redskin potatoes with the skin on into bite-sized pieces. Spread them evenly on a lined baking sheet. Drizzle with olive oil and sprinkle with kosher salt, black pepper, and BBQ seasoning. Toss everything together until the potatoes are well coated with the oil and seasonings.
- Bake the potatoes: Place the baking sheet with the seasoned potatoes into a preheated oven at 375°F (190°C) and bake for 25 minutes. This will start to crisp up the potatoes and partially cook them.
- Add the salmon: After 25 minutes, carefully move the potatoes to the edges of the baking sheet to create space in the center. Place the 2-pound side of salmon in the middle of the pan. Drizzle the salmon with olive oil and season evenly with kosher salt, black pepper, and BBQ seasoning to enhance its flavor.
- Finish baking: Return the baking sheet to the 375°F oven and bake for an additional 20 minutes, or until the salmon flakes easily with a fork and the potatoes are fully tender and crispy at the edges.
- Serve: Remove the pan from the oven and serve the salmon and potatoes hot. Optionally, drizzle with your favorite BBQ sauce for added zest and flavor.
