Ingredients
Crust
- 1 sleeve (9 full-size) graham crackers, finely crushed
- 2 tablespoons white sugar
- 2 tablespoons butter, melted
Filling
- 8 oz brick cream cheese, softened
- 8 oz tub whipped topping, thawed
- 1/2 cup strawberry preserves
- 1 1/4 cups chopped fresh strawberries, divided
Garnish
- Fresh mint leaves (optional)
- Remaining chopped fresh strawberries
Equipment
- 8-10 small (4 oz) jelly jars
Instructions
- Prepare the crust: In a mixing bowl, combine the finely crushed graham crackers and white sugar. Pour in the melted butter and mix thoroughly until the crumbs are evenly coated with butter. Using a 2 tablespoon scoop, divide the mixture evenly among the jelly jars. Firmly press down with a tart shaper or the back of a spoon to create a compact crust layer at the bottom of each jar. Set aside.
- Make the filling: In another mixing bowl, beat the softened cream cheese until smooth and broken apart. Add the whipped topping and strawberry preserves, mixing well until all ingredients are fully incorporated. Gently fold in 1 cup of the chopped fresh strawberries, distributing them evenly throughout the filling.
- Assemble the cheesecake jars: Spoon the strawberry cream cheese filling into each jar over the pressed crust, spreading evenly and pressing down lightly with the spoon to fill each jar without air pockets.
- Chill: Place the jars in the refrigerator and chill for 2 to 4 hours to allow the cheesecake mixture to set and flavors to meld.
- Garnish and serve: When ready to serve, top each jar with the remaining 1/4 cup chopped strawberries and a fresh mint leaf for a pop of color and freshness. Serve chilled.
Notes
- Make sure to soften the cream cheese well for easier mixing and smooth filling texture.
- Using fresh strawberries enhances flavor and texture, but frozen, thawed strawberries can be substituted if fresh is unavailable.
- If preferred, substitute whipped topping with homemade whipped cream for a fresher taste.
- The jars are perfect for individual servings and make elegant presentation options for gatherings.
- Refrigerate leftovers tightly covered and consume within 3 days for optimal freshness.
