Description

These No-Bake Date Cookies are a quick and healthy treat made with Medjool dates, melted dark chocolate, and creamy peanut butter. With no baking required, they are perfect for a nutritious snack or dessert that comes together in just 25 minutes. The rich combination of sweet dates and indulgent chocolate makes these cookies both satisfying and easy to prepare.

Ingredients

Cookies

  • 10 Medjool pitted dates
  • 1 cup dark chocolate chips
  • 1 tablespoon creamy peanut butter (made from peanuts and salt only)
  • Sea salt (optional, for sprinkling)

Instructions

  1. Prepare the Dates: Line a baking sheet with parchment paper. If your dates are not pitted, carefully split each date lengthwise without cutting all the way through and remove the pits. Spread each date on the lined baking sheet, spacing them about 2 inches apart.
  2. Flatten the Dates: Spray the bottom of a glass or a mason jar with cooking spray to prevent sticking. Lightly press down on each date with the glass to flatten it. Use a metal spatula or butter knife to gently lift the date off the glass if it sticks. Repeat until all dates are flattened.
  3. Melt Chocolate and Peanut Butter: Combine the dark chocolate chips and the creamy peanut butter in a microwave-safe bowl. Microwave on high for 45-60 seconds until melted, then stir until smooth and fully combined.
  4. Assemble the Cookies: Spoon 1 to 2 teaspoons of the melted chocolate and peanut butter mixture over the top of each flattened date, spreading to cover completely. Optionally, sprinkle a pinch of sea salt over each cookie to enhance the flavor.
  5. Set the Cookies: Place the baking sheet in the freezer or refrigerator to allow the chocolate topping to harden. Once set, the cookies are ready to serve and enjoy.

Notes

  • Use pitted Medjool dates for convenience, or remove pits carefully if using unpitted dates.
  • Adjust the amount of peanut butter and chocolate according to taste or desired coating thickness.
  • For a nut-free version, substitute peanut butter with sunflower seed butter.
  • Storing the cookies in the refrigerator will keep them firm; in the freezer, they can last longer and have a refreshing texture.
  • Optional sea salt enhances the chocolate and date flavor with a slight savory contrast.
