- ½ to ⅔ cup cucumber, diced to measure
- ¼ cup raw honey or agave (for Vegan option) or allulose (for Keto)
- ½ lime or lemon, juiced (about 1½ tablespoons)
- 1 to 2 drops spearmint essential oil
Instructions
- Prepare Ingredients: Measure and dice the cucumber, juice the lime or lemon, and gather all other ingredients.
- Blend Ingredients: Place the filtered water, diced cucumber, raw honey or chosen sweetener, lime or lemon juice, and spearmint essential oil into a blender. Puree until smooth, approximately 30 seconds, ensuring all flavors are well combined.
- Pour into Molds: Carefully pour the blended mixture into popsicle molds, then secure the bases and insert sticks. Optionally, add thin slices of lemon, lime, cucumber, or fresh mint leaves into the molds for added visual appeal and flavor.
- Freeze: Place the molds into the freezer and let them freeze completely for at least 3 to 6 hours to ensure they are solid and ready to serve.
- Serve: Remove the popsicles from molds and enjoy a cool, revitalizing treat on a warm day.
