Ingredients

Dressing

  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 3 cloves garlic, minced

  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper

Salad

  • 1 (15 to 16 oz) can chickpeas, drained and rinsed
  • 1 (15.5 oz) can cannellini beans, drained and rinsed
  • 2 bell peppers, diced (preferably 2 different colors)
  • 1/2 English cucumber, diced
  • 1/2 cup diced red onion
  • 1/2 cup Kalamata olives
  • 1/2 cup feta cheese
  • 1/4 cup finely minced fresh parsley
  • 1/4 cup diced pepperoncini


Instructions

  1. Prepare the Dressing: In a jar with a tight-fitting lid, combine the olive oil, lemon juice, minced garlic, honey, dried oregano, Dijon mustard, sea salt, and black pepper. Seal the jar and shake vigorously until the dressing ingredients are fully emulsified and blended.
  2. Combine Salad Ingredients: In a large bowl, add the drained and rinsed chickpeas and cannellini beans. Next, add the diced bell peppers, diced cucumber, diced red onion, Kalamata olives, feta cheese, minced fresh parsley, and diced pepperoncini. Stir gently to combine all the salad ingredients evenly.
