Ingredients

White Beans and Vegetables

  • ½ cup chopped fresh herbs (parsley, cilantro, basil, dill, tarragon, mint, or a combination)

  • ¼ teaspoon red pepper flakes
  • Ground black pepper, to taste

Dressing

  • ½ cup extra-virgin olive oil
  • Zest of 1 lemon (about 1 teaspoon)

Instructions

  1. Mix Together: In a large mixing bowl, combine the drained and rinsed white beans with the chopped fresh herbs, finely diced roasted red peppers, diced shallot, and minced garlic. Add the extra-virgin olive oil, lemon zest, lemon juice, kosher salt, red pepper flakes, and ground black pepper to the bowl.
