Sauce

Instructions
- Prepare the Pan: Grease a nonstick mini muffin pan very well with butter or nonstick cooking spray. Preheat the oven to 400 degrees F.
- Cook the Pasta: Bring a pot of salted water to a boil over high heat, then cook the elbow macaroni for 2 minutes less than the package instructions indicate. For example, if the package says 7 minutes, cook for 5 minutes. Drain the pasta and set aside.
- Make the Cheese Sauce: Return the empty pasta pot to medium heat. Melt the butter and stir in the paprika. Add the flour and cook while stirring for 2 minutes to form a roux. Gradually whisk in the whole milk, ensuring the mixture is thick and smooth without lumps. Remove from heat, then stir in the grated sharp cheddar cheese until melted and combined.
- Combine Pasta and Sauce: Add the drained pasta to the cheese sauce and stir thoroughly to ensure each piece is well coated with the cheesy mixture.
- Assemble the Cups: Portion the mac and cheese into the prepared mini muffin cups using a spoon or 3-tablespoon cookie scoop. Press down firmly with your fingers to pack the mixture tightly; this will help the cups hold their shape after baking.
- Bake: Bake the mac and cheese cups in the preheated oven for 15 minutes, until they are bubbling and gooey.
- Cool and Serve: Remove the cups from the oven and transfer to a wire rack to cool for at least 10 minutes.
