- 2 tsp salt (for boiling water)
- 2 Tbsp olive oil
- 1/2 Tbsp everything bagel seasoning

Instructions
- Boil the Potatoes: Place the baby potatoes in a large pot and cover with water by one inch. Add 2 tsp salt to the water, cover with a lid, and bring to a boil over high heat. Boil for about 10 minutes, or until the potatoes are very tender when pierced with a fork.
- Preheat Oven and Prepare Oil Mixture: While the potatoes are boiling, preheat your oven to 425ºF and line a large baking sheet with parchment paper. In a small bowl, combine olive oil and everything bagel seasoning.
- Drain and Smash Potatoes: Drain the boiled potatoes and let them cool slightly. Transfer them to the prepared baking sheet. Using a heavy-bottomed glass or potato masher, gently smash each potato until it is relatively flat but still holds together.
- Brush with Seasoned Oil: Brush the surface of each smashed potato with the olive oil and everything bagel seasoning mixture, ensuring even coverage for flavor and crispiness.
- Bake Until Crispy: Bake the smashed potatoes in the preheated oven at 425ºF for about 30 minutes, or until the edges of the potatoes turn golden brown and crisp.
- Add Cheese and Melt: Remove the baking sheet from the oven and sprinkle shredded cheddar cheese over the potatoes. Return to the oven for a few more minutes until the cheese is melted and bubbly.
