Description

This Lightened Up Cheesecake is a healthier twist on a classic dessert, using low-fat cottage cheese and non-fat Greek yogurt to create a creamy texture without the guilt. Sweetened naturally with stevia and brightened with lemon zest and fresh strawberries, this cheesecake is perfect for those craving a delicious treat that’s lower in calories and fat. Ideal for anyone seeking a flavorful yet lighter dessert option.

Ingredients

Cheesecake Base

  • 2 cups low fat cottage cheese
  • 1/2 cup non fat Greek yogurt
  • 2 eggs
  • 2 tbsp Truvia or other stevia based sweetener
  • 3 tbsp whole grain unbleached flour
  • 1 tsp vanilla extract
  • 1 tbsp lemon zest

Strawberry Swirl and Garnish

  • 1/4 cup pureed fresh strawberries plus more for garnish
  • Fresh berries for garnish

Instructions

  1. Preheat Oven: Preheat your oven to 350°F to prepare for baking the cheesecake.
  2. Blend Dairy Base: Place the low-fat cottage cheese and non-fat Greek yogurt in a blender and blend until completely smooth to ensure a creamy texture.
  3. Add Remaining Ingredients: Add the eggs, Truvia, whole grain flour, vanilla extract, and lemon zest to the blender. Blend again until all ingredients are well combined and the batter is smooth.
  4. Pour Batter into Pan: Grease an 8 or 9 inch springform pan thoroughly, then pour the blended batter into the pan evenly.
  5. Create Strawberry Swirl: Drop small spoonfuls of pureed strawberries evenly across the batter surface. Using a skewer, toothpick, or butter knife, gently drag through the spoonfuls to create a decorative swirl effect.
  6. Bake the Cheesecake: Bake the cheesecake in the preheated oven for 30 minutes, or until the top looks smooth, solid, and slightly pulls away from the sides of the pan.
  7. Cool and Chill: Allow the cheesecake to cool completely at room temperature. Then refrigerate for several hours or preferably overnight to set fully.
  8. Serve: Before serving, garnish with additional fresh berries for an attractive presentation and added fresh flavor.

Notes

  • Use a blender to achieve a smooth batter and creamy cheesecake texture.
  • Greasing the springform pan well prevents sticking and makes removal easier.
  • The strawberry swirl adds visual appeal and extra natural sweetness.
  • Refrigerating overnight improves texture and flavor development.
  • Substitute fresh strawberries with other fresh berries if desired.
  • This cheesecake is a lighter alternative but still delicious and satisfying.
