Ingredients

Lentils and Seasonings

  • 1 ½ cups dry lentils
  • ½ teaspoon salt (for cooking lentils)
  • 1 teaspoon cumin
  • ¼ teaspoon Aleppo chili flakes (or red pepper flakes)
  • 1 ½ tablespoons olive oil
  • Squeeze of lemon juice

Tahini Sauce

  • ½ cup tahini paste (stirred)
  • ¼ – ⅓ cup water, more to desired consistency
  • 1-2 tablespoons lemon juice (more to taste)
  • 1-2 tablespoons olive oil (optional)
  • 2 fresh garlic cloves (finely minced or grated)
  • ½ teaspoon kosher salt
  • ¼ teaspoon pepper

Vegetables and Garnishes

  • 2 cups dark leafy greens (organic spinach, arugula, kale)
  • 2 cups cauliflower florets, roasted or raw
  • 2 cups shredded carrots, cabbage, beets, or a mix
  • 1 bell pepper, thinly sliced (optional) or cucumber
  • ¼ cup nuts or seeds (pumpkin seeds, sunflower seeds, almonds, pine nuts)
  • Fresh herbs or microgreens (cilantro, flat leaf parsley, mint, or dill)


Instructions

  1. Cook the Lentils: In a medium pot, cover lentils with 2-3 inches of salted water. Bring to a boil, then reduce to a gentle simmer until tender, about 20-25 minutes. Drain and season with salt, cumin, olive oil, chili flakes, and a squeeze of lemon juice. Adjust seasoning for a flavorful base.
  2. Roast the Cauliflower: Preheat oven to 400°F (205°C). Toss cauliflower florets with olive oil, salt, and pepper. Spread on a parchment-lined baking sheet and roast until tender and lightly browned, about 20 minutes.
  3. Prepare the Tahini Sauce: In a 2-cup jar or medium bowl, whisk tahini paste with ¼ cup water until smooth. Add lemon juice, olive oil (if using), minced garlic, salt, and pepper. Whisk until creamy and smooth. Thin with additional water if a more pourable consistency is desired. Taste and adjust lemon and salt as needed.
  4. Prep the Vegetables: Shred or chop carrots, cabbage, or beets and slice bell pepper or cucumber. If using kale, shred and massage with a bit of olive oil and salt to tenderize.
  5. Assemble the Bowls: Place warm or chilled lentils in bowls. Top with roasted cauliflower, leafy greens, shredded vegetables, fresh herbs or microgreens, and optional sliced bell pepper or cucumber.
  6. Drizzle and Garnish: Generously drizzle tahini sauce over the assembled bowls. Sprinkle with nuts or seeds for added crunch and texture. Serve immediately.

Notes

  • For tender kale, massage with olive oil and salt before adding to the bowl.
  • Adjust salt and lemon juice in lentils and tahini sauce to your taste for best flavor.
  • You can substitute Aleppo chili flakes with mild red pepper flakes if unavailable.
  • The recipe is flexible—feel free to use leftover roasted vegetables or different nuts and seeds.
  • To make it oil-free, omit olive oil in the tahini sauce and roasting step.
