Description

Lemon Delight is a refreshing layered dessert featuring a buttery walnut crust, a creamy sweetened cream cheese layer, and a tangy lemon pudding topping, finished with whipped topping and crunchy walnuts. Ingredients

Crust

  • 1 cup all-purpose flour
  • 1 stick (8 Tbsp) unsalted butter, softened
  • 1 cup chopped walnuts, divided

Cream Cheese Layer

  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 (8 oz) container Cool Whip, divided

Lemon Pudding Layer

  • 2 (3.4 oz) packages instant lemon pudding mix
  • 3 ½ cups milk


Instructions

  1. Preheat the oven: Heat your oven to 350°F (175°C) to prepare for baking the crust.
  2. Make the crust: In a mixing bowl, combine the all-purpose flour, softened butter, and ¾ cup of the chopped walnuts. Press this mixture evenly into a 13×9-inch baking dish. Bake in the preheated oven for 20 minutes until golden. Allow to cool completely before proceeding.
  3. Prepare the cream cheese layer: Using an electric mixer, blend the softened cream cheese, powdered sugar, and 1 cup of Cool Whip until the mixture is smooth and creamy. Spread this mixture evenly over the cooled crust layer.
  4. Make the lemon pudding layer: In a separate bowl, whisk together the instant lemon pudding mixes and 3 ½ cups of milk until the pudding begins to thicken. Pour this lemon pudding layer gently over the cream cheese layer.
  5. Top and chill: Spread the remaining Cool Whip over the pudding layer, then sprinkle with the remaining ¼ cup chopped walnuts. Refrigerate the assembled dessert for at least 2 hours to allow it to set before serving.
