Description

Korean Fried Popcorn Turkey Nuggets are a crispy, flavorful dish featuring bite-sized pieces of turkey marinated in garlic, ginger, and soy sauce, coated in potato starch, and double-fried to golden perfection. Tossed in a sweet and spicy gochujang-based sauce, these nuggets offer an addictive combination of savory, sweet, umami, and heat—perfect for a satisfying snack or appetizer.


Ingredients

Turkey and Marinade

  • 1 lb (500g) turkey, cut into 1/2-inch bite-sized pieces
  • 2-3 cloves garlic (1 tablespoon grated or blended)
  • 2 slices fresh ginger (1½ tablespoon grated or blended)
  • 1/2 small onion (approx. 1/3 cup grated or blended)
  • 1 ½ tablespoon soy sauce
  • 1/2 cup potato starch (to add into marinade)

Coating

  • 3/4 cup potato starch (for coating the turkey)

Sweet & Spicy Korean Sauce

  • 2 tablespoons gochujang (Korean hot pepper paste)
  • 3 tablespoons tomato paste
  • 1/4 cup honey
  • 1 tablespoon soy sauce
  • 2 cloves garlic (1 tablespoon finely chopped)
  • 1 teaspoon sesame oil
  • 1/2 tablespoon gochugaru (Korean chili flakes, optional for extra heat)

Oil for deep frying

  • Vegetable oil or other neutral oil, for frying


Instructions

  1. Marinating the Turkey: Cut the turkey into 1/2-inch sized pieces and place them in a bowl. Using a food processor or manually, grate or blend the garlic, ginger, and onion with 1 ½ tablespoon soy sauce. Pour this marinade over the turkey and mix well. Cover and refrigerate for at least 1 hour to let flavors develop.
  2. Making the Sweet & Spicy Korean Sauce: Finely dice or grate 2 cloves of garlic. Heat a frying pan over medium-low heat and add a little oil. Once shimmering, add the garlic and fry until golden, about 1-2 minutes. Reduce heat to low and add gochujang, tomato paste, honey, soy sauce, sesame oil, and gochugaru. Simmer the sauce gently for 5 minutes, then remove from heat and set aside.
  3. Battering & Coating the Turkey: After marinating, stir 1/2 cup potato starch into the turkey mixture until sticky and combined. Spread 3/4 cup potato starch on a plate. Coat each turkey piece in the potato starch, shaking off any excess. Set pieces aside.
  4. First Fry: Heat oil in a deep fryer or a deep pot to 350°F (180°C). Fry the turkey pieces in batches, carefully avoiding overcrowding, for about 2 minutes until light golden. Remove and drain on a rack or paper towel to absorb excess oil.
  5. Second Fry: Once all pieces are fried once, return all the turkey pieces to the hot oil and fry for another 2-3 minutes to achieve extra crispiness. Drain again.
  6. Combining with Sauce: Stir the prepared Korean sauce; if too thick, thin it with 1-2 tablespoons of water. Reheat if necessary. Toss the freshly fried turkey nuggets in the sauce to coat evenly and serve immediately.

Notes

  • To test oil temperature, insert a wooden chopstick; if bubbles form around it, or a grain of rice sizzles upon dropping into the oil, the temperature is correct.
  • For a spicier kick, add more gochugaru or adjust gochujang quantity in the sauce.
  • Marinate turkey for at least 1 hour for best flavor absorption; longer marinading can enhance taste.
