Ingredients
Meat and Protein
- 2 pounds lean ground beef
- 1 full rotisserie chicken (shredded)
Vegetables
- 1 medium yellow onion (diced)
- 2 green peppers (chopped)
- 1 stalk celery (chopped)
- 10 mushrooms (chopped)
Canned Goods
- 1 can diced tomatoes (398 mL)
- 3 cans stewed tomatoes with Italian seasoning (398 mL each)
- 1 can tomato sauce (398 mL)
- 1 can dark red kidney beans (540 mL)
- 1 can pinto beans (398 mL)
Spices and Seasonings
- 1 cup water
- 1/2 cup chili powder
- Sea salt (to taste)
- Black pepper (to taste)
- 1/2 tsp cayenne pepper (optional)
Instructions
- Brown the Ground Beef: Heat a large, heavy-bottomed pot over medium heat. Add the ground beef, breaking it apart as it cooks. Continue cooking until browned and fully cooked, ensuring no pink remains.
- Sauté the Vegetables: Stir in the diced onion, chopped green peppers, celery, and mushrooms. Cook until the vegetables soften and release their flavors, about 5-7 minutes.
- Add Tomatoes and Liquid: Pour in the diced tomatoes, stewed tomatoes with Italian seasoning, tomato sauce, and water. Stir until everything is well combined.
- Season and Add Meats and Beans: Sprinkle in the chili powder, plenty of sea salt and black pepper to taste, and cayenne pepper if using for extra heat. Stir in the shredded rotisserie chicken, dark red kidney beans, and pinto beans evenly into the mixture.
- Simmer the Chili: Bring the chili to a gentle boil, then reduce the heat to low. Allow it to simmer uncovered for at least one hour, stirring occasionally. This slow simmer will deepen the flavors and thicken the chili.
- Adjust and Serve: Taste the chili and adjust the seasoning as needed. Ladle the chili into serving bowls and garnish with optional toppings such as shredded cheddar cheese, sour cream, Greek yogurt, or fresh green onions.
Notes
- For a spicier chili, increase the cayenne pepper or add chopped jalapeños.
- You can substitute ground turkey for ground beef to make it leaner.
- If you prefer a thicker chili, simmer uncovered longer or add a small amount of masa harina or cornmeal towards the end.
- Great for meal prepping and tastes even better the next day after flavors meld.
- Optional toppings enhance flavor and texture; consider avocado or cilantro as well.
