A vibrant and healthy grilled vegetables recipe that brings out the natural flavors of zucchini, red onion, mushrooms, yellow squash, bell peppers, and cherry tomatoes. Vegetables
- 1 zucchini
- 1 red onion
- 8 mushrooms
- 1 yellow squash
- 8 mini bell peppers (or 2 large bell peppers cut into quarters)
- 6-8 cherry tomatoes (whole on vine)
Seasoning and Sauce
- 1 ½ Tbsp olive oil
- 1 garlic clove, minced
- 1 tsp steak seasoning (divided)
- ½ tsp sugar
- Chimichurri sauce (optional, for serving)
Instructions
- Prepare the veggies: Slice zucchini lengthwise about ¼ inch thick using a mandoline or knife, cut red onion into thick rings, destem mushrooms, and slice yellow squash into thick discs about ¼ inch thick. Rinse the bell peppers and cherry tomatoes thoroughly.
- Make olive oil mixture: In a bowl, whisk together olive oil, minced garlic, ½ teaspoon of steak seasoning, and sugar until well combined.
- Brush veggies with oil mixture: Generously brush the prepared vegetables with the olive oil, garlic, seasoning, and sugar mixture to ensure they are evenly coated for grilling.
- Preheat and start grilling: Preheat the grill to 400°F. Place the onion rings on the grill first as they take a little longer to cook and help flavor the grill.
- Add remaining vegetables: Place zucchini, mushrooms, yellow squash, bell peppers, and cherry tomatoes on the grill, grilling for about 4 minutes until grill marks appear.
- Flip the vegetables: Turn all the vegetables over and continue grilling for another 3 to 4 minutes. Keep an eye on them to maintain some bite and avoid overcooking. Onions can cook a bit longer to become sweet and tender.
- Season and serve: Sprinkle the remaining ½ teaspoon of steak seasoning over the grilled vegetables. Serve optionally with chimichurri sauce for extra flavor.
