A delightful and quick Grilled Peach Breakfast Parfait that combines the smoky sweetness of grilled peaches with creamy Greek yogurt and crunchy granola, perfect for a healthy and elegant morning treat.
Ingredients
Peach Mixture
- 2 firm peaches
- 1 tbsp butter (salted or unsalted, softened)
- 1 tbsp brown sugar
- 1 tbsp oil (for oiling the griddle)
Parfait Layers
- 4 heaped tbsp Greek Yogurt
- 6 heaped tbsp Granola (store-bought or homemade; check for gluten-free if needed)
- Honey for drizzling (optional)
Instructions
- Prepare the Peaches: Slice the peaches in half by cutting around the stone, following the natural line. Gently separate the halves and carefully remove the stones using a spoon or sharp knife.
- Butter and Sugar Coating: Mix the softened butter and brown sugar together, then spread the mixture onto the cut side of each peach half evenly.
- Grill the Peaches: Heat a griddle or BBQ and brush it with oil to prevent sticking. Place the peaches cut-side down on the griddle or BBQ and cook for 2-3 minutes until golden brown. Flip and cook for 1-2 minutes on the skin side until slightly charred and tender.
- Cool and Chop: Remove the peaches from heat and allow them to cool. Once cooled, chop the grilled peach halves into chunks. Cover and refrigerate if not using immediately.
- Assemble the Parfait: In mini-mason jars or glasses, start by spooning a layer of Greek yogurt at the bottom. Add a layer of grilled peach chunks followed by a layer of granola. Repeat with another layer of Greek yogurt, then granola, and finish with the remaining grilled peaches on top.
- Finish and Serve: Optionally, drizzle honey over the top before serving for added sweetness and flavor.
